Carrot Soup



Carrot soup is a good winter warmer is quick and easy to do. You can substitute vegetable stock with chicken stock if you have some homemade broth in the freezer. To make a good stock of vegetables that need a large onion sliced, a few whole cloves, about 12 black peppercorns all, some mixed herbs, bay leaf, a little broken but still intact, a little grated nutmeg, which is the two optional celery stalks, cut in half to fund the medium. You can add peeled, quartered carrots too, but this is the carrot soup which is not required for this soup. However, if you want a vegetable broth for another recipe, add the carrot or maybe two. Pour in water to cover (one liter) add salt to taste and bring to a boil. Remove the foam that rises to the top and then lower the heat, partially cover pot and simmer for 45 minutes or an hour.
