Lemon Squares Recipe


Lemon Bars

Lemon squares for dessert is a delicious citrus, a mixture of sweet and bitter that help awaken the senses. Before you begin make sure you have a clean, large surface for cooking. You want to keep the floured surface (and hands), because the recipe tends to be sticky. Be sure to use a well floured surface (and hands) when forming the disk mass. You will want to use eggs at room temperature for filling.

Ingredients: Makes 12 bars

Crust:

    * ½ cup cold unsalted butter cut into (about ½ inch) pieces. Extra butter for greasing
    * ½ cup granulated sugar
    1 cup all-purpose flour
    * ½ teaspoon salt
    * ½ teaspoon ground cinnamon (optional for extra flavor)

Filling:

    * 3 large eggs, at room temperature
    * ¾ cup granulated sugar
    1 teaspoon lemon zest
    * ½ cup fresh lemon juice
    2 tablespoons all-purpose flour
